Pacific Palms Recreation Club Ltd is seeking a talented and experienced Sous Chef to join the dynamic kitchen team at The Recky, located in the stunning coastal town of Elizabeth Beach, NSW 2428. This is a full-time role offering a competitive salary package of AUD 77K – 80K plus superannuation.

The successful candidate will play a pivotal role in delivering high-quality dining experiences across à la carte service, functions, and events.

Scope of the role:
- Lead the team to facilitate the smooth and efficient operation of the kitchen in line with company standards.
- Take charge of overall kitchen leadership in the absence of the Head Chef, ensuring operational continuity and adherence to service benchmarks.
- Oversee the preparation, cooking, and presentation of all culinary offerings, ensuring each dish — across menus and daily specials — is executed to consistently exceptional standards of quality, creativity, and presentation.
- Execute menu items to standard, maintaining portion control, quality assurance, and timely preparation in accordance with kitchen expectations.
- Collaborate with the Head Chef to maintain consistency of service standards and culinary excellence.
- Accurately forecast demand, conduct monthly inventories, and manage ordering and stock control to ensure uninterrupted operations and cost-effective resource utilisation.
- Assist in managing food expenses and waste reduction initiatives.
- Analyse recipes and assign menu item pricing based on food, labour, and overhead costs.
- Plan production schedules and allocate staffing resources to guarantee timely service delivery.
- Supervise, mentor, and support cooks, while assisting with food preparation as required.
- Inspect supplies, equipment, and work areas to ensure compliance with established operational standards.
- Train and develop junior staff to uphold venue standards and maintain operational efficiency.
- Regularly demonstrate innovative cooking techniques and modern kitchen equipment usage, keeping the team aligned with culinary trends and continuous improvements.
- Liaise with front-of-house staff to streamline service delivery and ensure seamless coordination between kitchen and dining operations.
- Oversee and enforce strict compliance with food safety, sanitation, and occupational health and safety regulations.
To be considered for this role, you should
- Certificates III & IV in Commercial Cookery from Australia
- Have at least 5 years of work experience as a Chef in a similar cuisine
- Good knowledge of occupational health and safety (WHS) and HACCP.
- Ability to work in a team.
- Excellent communication skills.
- Be willing to relocate if you are interstate or in other cities.
