Surly’s American Tavern is on the hunt for a skilled, driven Sous Chef to join the team and help lead our kitchen into its next chapter.

We’re a well-established, high-volume venue known for our smoked BBQ, epic burgers, and delicious wings, serving up authentic American eats from our Ole Hickory Pit Smoker in the heart of Surry Hills.

As we grow, we’re looking for someone who thrives in a fast-paced environment, brings creative flair to the menu, and knows how to lead a team with professionalism and passion.

The Role
You’ll work closely with the Head Chef and Group GM to:

- Oversee day-to-day kitchen operations
- Maintain high standards of food quality, hygiene, and safety
- Help develop and execute seasonal menus and specials
- Train and support junior kitchen staff
- Ensure smooth service during busy periods
- Assist with stock control, ordering, and wastage management

You’ll Need:

- Minimum 3 years’ experience in a similar role
- Proven ability to lead a kitchen team under pressure
- Confidence with American BBQ and smoked meats a big plus
- Solid understanding of kitchen operations, costing, and compliance
- A calm, can-do attitude and strong communication skills
- Availability to work nights and weekends
