About Us
Located at the foot of the Grampians (Gariwerd) National Park, the Royal Mail Hotel is renowned for its award-winning restaurants, sustainability leadership, and immersive food experiences. At the heart of our culinary philosophy is Australia’s largest working restaurant kitchen garden, which supplies up to 80% of the produce used in our acclaimed restaurants, Wickens and Parker Street Project.

Our organically managed garden and landscaped grounds are a living expression of paddock-to-plate dining and environmental stewardship. We’re seeking a skilled and passionate Senior Landscape Specialist & Gardener to help maintain and develop this unique environment.

About the Role
This is a hands-on horticultural role focused on the care and development of the kitchen garden and surrounding landscaped areas. You’ll work closely with the culinary team to ensure seasonal crops are grown to support menus, while also maintaining ornamental and native plantings that enhance the property’s natural beauty.

What You’ll Do

Garden Care

Soil preparation, propagation, planting, pruning, harvesting, and crop rotation, including

Preparing seedbeds and growing sites

Planting trees, bushes, hedges, flowers and bulbs

Maintain composting systems and organic pest and weed control.

Operate and maintain irrigation systems incuding

Determining irrigation system hydraulic parameters

Installing irrigation systems including pumps and meters

Testing, maintaining, and repairing irrigation systems

Landscape Maintenance

Care for ornamental and native plantings, lawns, and pathways. Including constructing gravel and paved areas, walls, fences, trellises, pergolas, ponds, and garden furniture

Implement landscaping projects and improvements including preparing plans and drawings, selecting materials and plants, and scheduling landscape construction as well as setting out and installing hardscape and softscape structures

Implement water-efficient and sustainable gardening practices.

Guest Engagement

Lead or assist with garden tours and share knowledge about organic growing and sustainability.

Team Collaboration

Work closely with chefs to align seasonal crops with menus.

Support training of junior staff or volunteers when required.

What We Offer

Full-time position with competitive pay circa $77,000-$80,000 p.a. plus supernanuation

About You 
Experienced gardener or horticulturist with practical skills in plant care and landscaping.
Knowledge of soil health, irrigation systems, and organic growing practices.
Enjoy working outdoors and creating productive, beautiful spaces.
Interest in sustainability and paddock-to-plate principles.
Comfortable engaging with guests (training provided).
Certificate IV or higher in a related field and minimum 12 months experience
