a'Mare is a Two-Hatted luxurious venue led by Step into one of Australia’s most celebrated Italian restaurants, where timeless traditions meet refined hospitality. At a’Mare, we showcase the best of Italian cuisine – seasonal produce, handcrafted pasta, woodfired flavours, and tableside service – all delivered in the spectacular setting of Crown Sydney.
Cibaria Manly is a One-Hatted, multi-level, 350-seat Italian restaurant that brings together the best of Italian cuisine across its diverse culinary stations that include; antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria, and gelateria. From handcrafted pastas and woodfired pizzettas, to curated cocktails and house-made gelato, we offer a true Italian experience from morning through to late evening.
Our venue includes à la carte dining, private event spaces, and our beachfront Caffetteria open daily from 7am. We also serve bespoke drinks through Cocktaileria, located within 55North Bar by Cibaria, in partnership with the Manly Pacific Hotel (M Gallery).
We are seeking several Chefs of all levels (cooks, chefs & chef de partie) who thrive in a high-performance environment, value precision and authenticity, and are driven to deliver excellence every service. Casual roles available along with full time for the right candidate.
Essential Requirements:
Full Australian working rights
Fluent in English
Diploma Hospitality Qualification and/or 1-3 years employment experience
Ability to maintain composure in a fast-paced, high-end kitchen
Understanding of HACCP principles and food safety management systems
Strong attention to detail and pride in presentation
Flexibility to work evenings, weekends, and public holidays
Experience handling 100+ covers per service in fine dining
Impeccable grooming and presentation
Must pass police background check and obtain casino security clearance (for a'Mare)
Preferred Skills & Experience:
Food Safety Supervisor certification
Expertise in fresh pasta making, pastry, seafood, or woodfire cooking
Previous high-end Italian dining experience
Your Role:
Prepare and plate dishes to exacting standards every time
Collaborate on menu planning, recipe development, and tastings
Support training and development of junior chefs
Ensure food safety and hygiene compliance
Assist with stock control, cost management, and waste reduction
