Job description:?????
-Create handcrafted pastry goods ensuring adherence to defined standards.
-Carry out a range of tasks for the effective preparation of pastry goods including kneading, cutting, moulding, bending, and forming dough.
-Skilfully handle equipment dedicated to the rolling and moulding of dough, ensuring efficient and precise preparation processes.
-Weigh and portion ingredients accurately throughout the preparation process.
-Prepare fillings, dough, and toppings, ensuring high-quality standards in taste and presentation.
-Research and develop innovative recipes and menu items to enhance menu offerings.
-Check the quality of raw ingredients and store food items appropriately to ensure freshness.
-Manage stock storage and stock rotation of all prepared foods and raw ingredients. This includes dating and labelling to the food standards.
-Develop and refine company recipes, experimenting with seasonal ingredients.
-Regularly check and adjust oven temperatures, assessing product appearance to identify ideal baking durations.
-Coordinate the entire baking process including shaping, moulding, loading/unloading, baking, de-panning and cooling of all pastry products.
-Ensure proper machine functioning and maintenance.
-Maintain budgetary targets by efficient use of ingredients and resources.
-Carry out the tasks of emptying, cleaning, and greasing baking utensils, ensuring a hygienic and well-maintained kitchen environment conducive to optimal productivity.
-Ensure hygienic handling of food and equipment is adhered to by enterprise standards for occupational health and safety. Fridge, freezers, doors, floors, and operating equipment to be kept in excellent order, ensuring all staff are trained in the use of chemicals and the standard of cleaning is constantly at its highest.
-Clear and constant communication with all departments to ensure the operation runs smoothly. Manage and drive team morale, particularly in times of stress. Develop a sound professional relationship with sales and kitchen staff.
Qualifications/Attributes:???
-Must hold at least a Certificate IV in Patisserie, or 3 years of relevant work experience in lieu of the required qualification.
-Must have at least 1 year of relevant experience.??
-Good knowledge of baking methods, dough handling, and oven operation
-Familiarity with food safety and occupational health and safety practices
-Teamwork and communication skills
-Strong attention to detail and quality control

Salary Range: $75,000 – $85,000 p.a. excluding superannuation
