Reporting to the Pastry Sous Chef you will assist to manage a team of Pastry Lead Commis and Pastry bakers. Task & responsibilities As a Pastry Chef de Partie in our large-scale production bakery, you will play a key role in the creation and execution of high-quality pastries, and baked goods. You will assist in the preparation, production, and presentation of pastry items while ensuring that quality standards, food safety protocols, and deadlines are met. Key Responsibilities: -    Pastry Production: Execute daily pastry production tasks, including mixing, baking, assembling, and decorating pastries, cakes, tarts, breads, and other bakery items as required. -    Recipe Execution: Follow established recipes and guidelines to ensure consistency in product quality, taste, and presentation across all production lines. Make necessary adjustments based on quality control checks. -    Creativity & Innovation: Collaborate with senior pastry chefs to develop and re?ne new products and seasonal specials, while staying current with industry trends and innovations in pastry. -    I nventory Management: Monitor and manage pastry ingredients, supplies, and inventory. Ensure ingredients are fresh and stored properly and report any shortages or issues to the Sous Chef in a timely manner. -    Quality Control: Inspect ?nished products for quality assurance. Maintain consistency in ?avour, texture, and appearance, and adjust when necessary to uphold company standards. -    Health & Safety Compliance: Follow food safety protocols (HACCP) and health regulations to maintain a clean and safe working environment. Participate in daily cleaning and sanitation of workstations, tools, and equipment. -    Team Collaboration: Work closely with other kitchen and production staff to ensure smooth operations and communicate efectively with your team to resolve any issues that arise during production. -    Time Management:   Ensure production timelines are met, especially during high-volume production periods. Assist in planning and organizing the pastry production schedule to maximize efficiency. -    Training & Development: Mentor and guide junior pastry chefs, apprentices, and interns. Share knowledge, skills, and best practices to support their growth within the kitchen.     Qualification & experience • Chef trade qualifications • A genuine interest and passion for food and desire to work as part of a close-knit team. • Strong communication and interpersonal skills, and ability to work under pressure • Minimum 1 year baking and pastry experience and be able to lead by example and encourage other kitchen staff. • Ability to train kitchen staff to ensure Company expectations are achieved • Reliable and punctual • Ability to multi task and work effectively within a fast-paced environment • Ability to contribute to maintaining a clean, safe work environment • Proven ability to use initiative and be a self-starter • Excellent attention to detail. • Professional communication, presentation and customer relation skills. • Creativity and flair. • Strong sense of ownership and pride in your performance. • Work well under pressure, and in large production environment as well as work as a team and the ability to remain calm. • Available to work as per rostering requirements including nights, weekends and public holidays       About Company Synonymous with excellence and built from humble beginnings alongside undying passion and determination, Sonoma Baking Company is one of the world’s most respected artisan bakeries.
