Pastry Chef – Join Our Scenic Country Venue
Set on beautiful acreage at the base of Tamborine Mountain, Bearded Dragon Hotel is a proudly independent, iconic country hotel and function venue offering weddings, events, casual dining, takeaway, room service and boutique accommodation. We’re looking for a skilled and passionate Pastry Cook to join our kitchen brigade and take the lead on our pastry section.
This full-time role offers the opportunity to showcase your creativity and technical skill across a variety of service styles — from classic desserts to custom wedding cakes and café-style treats.
Main Responsibilities and Tasks:
• Prepare and present a wide variety of pastries, desserts, cakes, slices, and sweet & savoury menu specials
• Design new dessert items and contribute ideas for events and high teas
• Maintain high quality presentation and plating for all service types
• Prepare doughs, batters, fillings, glazes, and sauces in-house
• Portion and decorate items according to service or client preferences
• Perform daily cleaning, rotation, stocktaking, and equipment checks
• Manage your own pastry prep area efficiently and hygienically
• Work with Head Chef on custom orders and menu changes
• Adhere to HACCP, food safety, and allergy management practices
• Support and train junior kitchen staff as needed
Required Qualifications & Experience
• Certificate III in Patisserie or Commercial Cookery (or 3+ years equivalent experience)
• Minimum 3 years’ experience in a similar pastry or dessert-focused kitchen role with high volume & fast pace
• Understanding of dessert trends, seasonal baking, and customer expectations
• Ability to multi-task across à la carte, event, and takeaway prep

• Passion for scratch baking, with a flair for classic and modern techniques
• Commitment to producing consistently high-quality baked goods
• Eye for presentation, attention to detail and portion control
• Excellent hygiene, time management, and prep organization
• Strong time management and organizational skills to meet production deadlines
• Team-first attitude and great communication skills
• Ability to work under pressure during peak weekends and events
