THE ROLES:
BRICKFIELD HOSPITALITY GROUP is looking for experienced & talented Chefs to join the kitchen team at Cheers Bar & Grill in Sydney NSW.
Cheers Bar & Grill has operated in the Westminster House Building in the Sydney CBD for over 30 years. Originally starting as an Australian bistro, Cheers has since expanded to become a premier 3-level dining and entertainment venue, offering a range of menu options including modern Australian cuisine and Asian Fusion dishes and extensive function/event packages.
We are looking for an experienced Junior Sous Chef & Sous Chef to help manage the kitchen operations at the venue. We are looking for trade-qualified candidates who have extensive experience working in and leading high-volume kitchens and who have a passion for producing high-quality food.
As Junior Sous Chef / Sous Chef, you will be responsible for:
- Assisting the Head Chef with kitchen management & leading the kitchen team
- Working with the Head Chef to plan menus & design meal specials
- Financial management & cost-control operations
- Ordering ingredients & supplied & general stock management
- Ensuring the quality of all dishes
- Overseeing the preparation/plating/cooking of all food items
- Assisting with staff recruitment & hiring
- Leading, training, supervising & guiding kitchen staff
- Ensuring compliance with food safety & hygiene regulations & WHS requirements
- Supporting all BOH & FOH staff to ensure the consistent delivery of quality food
Full-time salary range: $75,000 - $80,000 (depending on role & experience)
ABOUT YOU:
To be successful in this position, you will need to be able to demonstrate the following skills & culinary abilities:
- Culinary trade qualifications
- At least 2-3 years experience at a comparable level
- Experience working in a similar-style venue
- Experience with a range of cuisines including modern Australian & Asian dishes
- Experience working across different kitchen sections
- Experience leading & managing a kitchen team
- Experience with guiding & training kitchen staff
- Excellent written & verbal communication skills
- Strong time management & organisational skills & the ability to multitask
- A passion for food & cooking
- Creativity & innovation in your culinary work
- Demonstrated knowledge of all HACCP & WHS regulations
- Cooperation skills & the ability to work well within a diverse kitchen team
- Strong leadership & management skills
