Head Chef - Stock Exchange Hotel

We have an opportunity for an experienced Chef to lead our kitchen teams and be an important ingredient in our company’s success!

As a Chef, you'll have the opportunity to showcase your disciplined kitchen skills, leadership skills, and culinary expertise in a dynamic and supportive environment. You will have experience operating and controlling a venue and driving the BOH team. This role is results-focused with weekly KPIs to enable you to drive your team to success in the business. A normal week may be 4.5 services with the opportunity of Sundays and Mondays off.

Our company has its own Immigration Lawyer; we do visas and sponsorships.

This is a full-time role.

Pay Range: $80,000 - $95,000 per year (Total Renumeration Package)

The Venue: Stock Exchange Hotel Brisbane

Located in Brisbane City, it consists of a restaurant, sports bar, rooftop and two function areas. Sales approx. $30k per week in food & approx. $100K per week in beverage.

About the role
• Lead and inspire a team to achieve culinary excellence and consistently exceed our customers expectations.
• Lead and oversee kitchen operations, including food preparation, inventory management, and adherence to health & safety standards and compliance.
• Foster a culture of collaboration, mentorship, and continuous learning among kitchen team members to promote growth and development.
• Control costs, maximise profitability, and maintain high standards of quality and consistency.
• Deliver weekly KPI’s (sales, food COGs, wage %).

About you
• Proven experience as a Chef.
• Culinary degree or equivalent certification from a recognised culinary institution.
• Extensive knowledge of various cuisines, cooking techniques, and flavour profiles (we are a clean well priced Australian pub).
• Strong leadership skills with the ability to motivate and inspire a diverse team.
• Excellent organisational, communication, and problem-solving abilities.
• Experience in managing a cohesive team.
• Experience with stock takes, stock ordering, rostering and maintaining budgets.
• Strong communication skills, ability to unite front and back of house teams to collaborate to deliver an exceptional customer experience.
