Itamae Sushi and Sous Chef
Salary $78,000 per annum plus Superannuation
We are looking for a creative and proficient “Itamae” Sushi and Sous Chef in all aspects of authentic Japanese food preparation. Under the directions of the Head Chef, you will maintain complete control of the Sushi Table and have supervision over the main kitchen.
ITAMAE SUSHI AND SOUS CHEF POSITION DESCRIPTION:
• Known as Itamae in Japanese, which translates to “in front of the board”, the head sushi chef is responsible for the overall preparation, production and presentation of all the sushi.
• Cook guests' orders according to their preferences.
• Employs food safety best practices and makes sure that all kitchen staff members do the same.
• Acts with appropriate caution in a dangerous environment where there are knives and high-temperature surfaces – in particular sharp sashimi knives.
• Selects choice ingredients that will give sushi, sashimi and other dishes the best flavour.
• Experiments to come up with new sushi and Japanese cuisine specialties that will draw diners into the restaurant.
• Coaches the other chefs, cooks and other members of the kitchen staff, so they perform at their best.
• Determines how much food to order and maintains an appropriate supply at the restaurant.
• Organises appropriate budgets and expenses for the kitchen and staff.
• Keeps up with trends in sushi and cooking, and the Japanese restaurant business to ensure that guests have a positive experience.
• Works quickly and accurately during busy periods, such as weekends and evenings.
• Takes direction and works with the restaurant's administrative team.
REQUIRED SKILLS
• Relevant Diploma or Higher
• Have substantial experience in a similar role as a Full Time Itamae Sushi and Sous Chef
• Strong knowledge in authentic Japanese sushi, food, desserts and garnishing is compulsory
• Experience in training and supervising kitchen staff
• Good understanding of budgeting process and principals of achieving the same
• Knowledge of purchasing, ordering, receiving, food costing and inventory procedures
