SALARY $76,000 - $80,000 + Superannuation
SUMMARY
Indian Brothers Annerley is part of the Indian Brothers group of restaurants operating multiple suburban branches in Brisbane. We specialize in authentic North Indian flavours, with offerings that include dine-in, takeaway, and outdoor catering. Our menu is extensive, including Tandoori cuisine, classic breads and vegetarian and non-vegetarian curries, rice dishes, street food, desserts, and even pizzas with Indian styling.
The Chef will be responsible for planning, preparing, and delivering high-quality North Indian cuisine to meet customer expectations. The role requires strong culinary expertise, menu planning, food quality monitoring, and adherence to hygiene standards, while supporting staff training and contributing to the overall efficiency and success of the business.
DUTIES
Key Tasks & Responsibilities
Menu Planning & Supplies
• Assist with menu design and specials.
• Estimate food/labour costs and forecast demand.
• Order, check and manage stock, storage, and preservation.
Food Preparation & Cooking
• Cook all menu items (curries, tandoori, breads, rice, seafood, desserts).
• Maintain flavour, portion, and consistency.
• Prepare takeaway and catering orders.
Quality & Presentation
• Monitor food quality from prep to plating.
• Adjust flavours and ensure consistent presentation.
Hygiene & Compliance
• Maintain food safety and kitchen hygiene.
• Enforce safe handling, storage, and cleaning practices.
Supervision & Training
• Lead and train kitchen staff.
• Demonstrate techniques and allocate tasks.
• Liaise with management and catering staff.
Food Preservation & Waste Control
• Freeze/preserve foods and manage storage.
• Control waste and portion sizes.
Other Duties
• Assist with non-food supply orders.
• Contribute to new dishes and specials.
• Support cleaning and closing procedures.
REQUIRED SKILLS
• Certificate IV in Commercial Cookery (or equivalent).
• Minimum 1 year experience in a Chef role, with strong exposure to North Indian cuisine and related breads (tandoori, naan, paratha) and curries.
• Experience preparing for multiple service types: dine-in, takeaway, and catering events.
• Good understanding of costing, portion control, supply management.
• Strong skills in food safety, hygiene practices, allergen control.
• Ability to maintain consistency of flavour, presentation, and menu quality under high volume / busy periods.
