Position Overview
Shirdi Sainath Pty Ltd, trading as Shell Sebastopol (Ballarat), operates a high-volume 24-hour service station offering dine-in, takeaway, and drive-through food services. The site also caters to travellers and long-haul truck drivers by providing amenities including a truck canopy, drivers’ lounge, showers, and restroom facilities.

The Chef position is responsible for planning, organising, and supervising the preparation and cooking of food items during daytime operations. The role ensures consistent food quality, compliance with Australian food safety standards, efficient kitchen operations, and contributes to menu planning and service delivery to meet business and customer requirements.

Key Duties and Responsibilities
Food Preparation and Cooking
• Plan, prepare, and cook a variety of food items including hot meals, takeaway items, and dine-in meals.
• Ensure all meals are prepared and presented in accordance with business standards and customer expectations.
• Monitor food quality at all stages of preparation and presentation.
• Control portion sizes and maintain consistency of meals.
• Modify recipes and preparation methods where required to meet dietary or operational needs.

Menu Planning
• Plan and contribute to menu development, including selecting ingredients and determining food preparation methods.
• Develop menu options suitable for breakfast, lunch, and early evening service.
• Evaluate customer demand and recommend menu improvements or new food offerings.
• Ensure menu planning aligns with operational requirements and customer demographics including travellers, truck drivers, and local customers.

Kitchen Operations and Staff Supervision
• Coordinate and supervise kitchen operations during day shifts.
• Train, supervise, and provide guidance to kitchen assistants and food preparation staff.
• Ensure food preparation activities are carried out efficiently and safely.
• Assist in rostering and task allocation to support operational requirements.

Stock Control and Purchasing
• Estimate food and labour costs and assist in budgeting for kitchen operations.
• Monitor stock levels and order food supplies and kitchen consumables as required.
• Inspect food supplies and raw ingredients to ensure quality and freshness.
• Implement stock rotation procedures and minimise food wastage.

Food Safety and Compliance
• Ensure compliance with Food Standards regulations.
• Maintain hygienic kitchen and food storage environments.
• Monitor storage, handling, and preparation of food to ensure safe consumption.
• Ensure compliance with Workplace Health and Safety legislation.
• Maintain appropriate records relating to food safety and operational compliance.

Customer Service and Business Support
• Ensure food service meets quality and presentation standards expected by customers.
• Respond to customer feedback and assist in resolving service or food quality issues.
• Support business growth by maintaining high food standards and operational efficiency.
• Contribute to maintaining a professional and welcoming dining environment.

Working Environment
• The business operates 24 hours; however, the Chef position is primarily required to work daytime shifts.
• The role involves working in a fast-paced commercial kitchen environment.

Qualifications and Experience Requirements
Essential
• Certificate IV in Commercial Cookery or equivalent qualification.
• At least one year of relevant full-time work experience as a Chef (or equivalent).
• Demonstrated knowledge of food preparation techniques and commercial kitchen operations.
• Sound knowledge of Australian food safety and hygiene standards.
Skills
• Strong organisational and time management skills.
• Ability to supervise and train kitchen staff.
• Ability to work efficiently under pressure.
