We are seeking an Executive Sous Chef to join our senior Culinary Leadership Team. This is a rare opportunity to make your mark in a world-class resort environment, working alongside our Executive Chef to deliver exceptional dining experiences.
About the Role
As Executive Sous Chef, you will be second-in-command of the Resort’s kitchens, responsible for both the strategic and daily operational success of the culinary team. You will:
Lead the kitchen operation across multiple outlets and events, ensuring exceptional quality, consistency, and presentation.
Partner with the Executive Chef and Director of Food & Beverage on menu development, budgets, standards, and the Resort’s Food & Beverage calendar.
Take full charge of kitchen operations in the Executive Chef’s absence.
Drive food quality, freshness, cost control, and minimise waste.
Ensure compliance with Food Safety and Hygiene standards across all kitchens.
Lead, mentor, and train a diverse culinary team, supporting professional development and succession planning.
Conduct daily briefings, weekly meetings, appraisals, and ensure training requirements are consistently met.
Be a key driver of guest satisfaction, leading action plans to improve GuestVoice and GEI scores.
Collaborate with stakeholders across the Resort, supporting events and operational excellence.
About You
We are looking for a hands-on leader who thrives in a high-volume, luxury environment. You will bring:
Minimum 2 years’ experience in a senior culinary role (Executive Sous Chef or strong Sous Chef) within a 4 or 5-star international hotel or resort.
Certificate III in Commercial Cookery (or equivalent).
Safe Food Handling Certificate (essential).
Queensland Responsible Service of Alcohol (RSA) – essential if supporting outlets.
First Aid Certificate (desirable).
Strong leadership and team management skills with a proven ability to train, motivate, and inspire.
Excellent organisational and communication skills.
A passion for delivering exceptional guest experiences.

Salary: $70,000 - $90,000 plus superannuation
