Our client BALLASALLA DISCRETIONARY TRUST & DATURN FAMILY TRUST & JODAAN TRUST & TURNER INVESTMENT TRUST t/a The Bennett Hotel is seeking a motivated and experienced Chef/Cooks to join the dynamic kitchen team in Hamilton, NSW.
The Bennett Hotel is a locally owned and operated pub in the backstreets of Hamilton. Since 2019, under the ownership of the Turner family and Simon Finlay, brothers Joel & Dan have transformed the venue into a vibrant local favourite. It offers great food, a relaxed atmosphere, and multiple unique spaces for dining, functions, and events.
The Bennett Kitchen focuses on seasonal pub fare, crafted with quality, locally sourced ingredients. This hotel is more than just a corner pub – it's a destination for locals and visitors who value good food, good service, and good times.
They are looking for skilled Chefs/Cooks to join their team in full-time positions. This is a fantastic opportunity to join a proudly locally owned venue with a strong reputation in Hamilton, where quality, creativity, and consistency are at the heart of everything we do.
As a Chef/Cook, you will play a key role in the day-to-day operations of the kitchen. Your responsibilities will include:
Scope of the Work:
- Overseeing daily kitchen operations, including staff delegation, stock rotation, and maintaining accurate records.
- Preparing and cooking a variety of dishes, either regularly or for special functions and events.
- Managing production schedules and staff requirements to ensure timely service delivery.
- Estimating food supply needs, calculating costs for ingredients, and managing orders accordingly.
- Inspecting supplies, equipment, and work areas to ensure adherence to established quality standards.
- Analysing recipes and advising prices to menu items based on food, labour, and overhead costs.
- Working closely with team members to execute established recipes and menus with consistency and precision, ensuring alignment with seasonal availability and anticipated customer volume.
- Demonstrating new cooking techniques and introducing equipment to staff for continual culinary improvement.
- Oversee workstation readiness by ensuring mise en place is complete, equipment is functional, and kitchen operations are primed for service efficiency and food quality standards.
- Prepare and cook dishes in strict compliance with food safety and health regulations, ensuring the highest quality and hygiene standards are maintained.
- Assist in onboarding, training, and supervising new team members, providing guidance and fostering a collaborative, efficient work environment.
- Monitoring and enforcing sanitation practices to ensure compliance with health and safety regulations, including Occupational Health and Safety (WHS) and HACCP.
To be considered for this role, you should:
- Be willing to relocate if you are interstate or in other cities.
- Preferably have Certificates III & IV in Commercial Cookery
- Be available on both days at weekends and be able to work split shifts.
- Have at least 2- 3 years of work experience as a Cook/Chef.
- Ability to work in a team.
- Exceptional communication skills.
