Pavoni Plus Pty Ltd, the team behind a’Mare Restaurant at Crown Sydney, also has Cibaria Manly in the Northern Beaches of Sydney.

Cibaria showcases all the favourite aspects of Italian dining with its different ‘rias’; antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria, and gelateria, bringing the best of Italian food and drinks to Manly.

As a multi-level, 350-seat venue, we cater to à la carte dining, group bookings, and private events. We are a seven-day operation, opening from 7 am for our Caffetteria and closing late. As part of Manly Pacific Hotel (M Gallery), we also offer exceptional drinks through our Cocktaileria, 55North Bar by Cibaria.

With our premium beachfront location, an incredible menu of Italian comfort foods, and a top-tier hospitality experience, Cibaria has quickly become a local favourite, with most evenings and every weekend completely booked out.

We are looking for a seasoned Restaurant Manager to lead and direct our team to success. The ideal candidate will have prior experience working in large scale venues with multiple outlets

Essential Requirements:

Strong English communication skills; written and spoken.
Current NSW RSA
Full Australian working rights
Computer literacy is a must!
Minimum 18-36 months in a managerial role in a premium dining setting and/or
Hospitality Diploma or equivalent
Great memory for faces and ability to engage customers and staff and build excellent rapport
Italian food & wine knowledge
Polite personal manner, both face-to-face and over the phone
Ability to multi-task
Understanding of hospitality costs & labour management
Ability to keep cool under pressure
Strong team-leading skills
Excellent attention to detail
Excellent grooming standards
Hours can vary and include weekend and holiday work
Preferred Requirements:

Formal wine studies completed
Experience with SevenRooms or other online reservations platforms
Speak Italian? Bonus!

Shift management
Ensuring the smooth and consistent delivery of service
Delivery of daily staff briefings prior to every service
Daily shift operations & financial reporting
Cash handling
Ongoing staff performance management
