The Paragon Hotel is a cozy, country hotel in the heart of Mudgee. A hidden gem, beloved by local and tourists alike, for its country charm, the best pub food in town & friendly hospitality.

We are currently seeking for Chefs who will be responsible for overseeing the smooth operation of kitchen activities at Paragon Hotel Mudgee, including menu planning and costing, organizing special events, developing new dishes, and maintaining high food quality standards.

Key Role and Responsibilities:

* Customer & Team Relations: Foster professional interactions with customers, staff, and third parties, enhancing the brand image.
* Culinary Excellence: Prepare and present high-quality meals, innovate new dishes, and uphold consistent kitchen standards.
* Menu Strategy & Development: Analyze dish performance, adjust menus, and contribute to special events and promotions with team input.
* Operational Management: Develop and enforce SOPs, maintain hygiene and cleanliness, and ensure compliance with health regulations.
* Procurement & Inventory: Manage food purchasing from approved suppliers in coordination with the Purchasing Manager/Stock Controller.
* Staffing & Cost Control: Oversee roster planning within payroll budgets, adjust staffing based on revenue trends, and implement cost-saving measures.
* Financial & Performance Analysis: Review revenue and operational reports, identify issues, and take corrective actions as needed

Qualifications and Skillset:

* Holds a Diploma or Vocational Certificate in Culinary Skills (or related), Food Safety Supervisor certification is preferred.
* At least 5 years of chef experience, including 2 years in a supervisory role, or equivalent education/experience is preferred.
* Holds RSA certification, food service permit, or valid health/food handler card as required locally is preferred.
* Strong problem-solving, reasoning, and motivational skills with a positive, team-oriented attitude.
* Exceptional customer service, professionalism, and friendliness, leading by example.
* Detail-oriented to maintain compliance and manage time efficiently, able to perform well under pressure and in high-volume environments.
* Computer literate

Salary range: $70,000 - $80,000 per year
