Qualifications & Experience: Relevant formal culinary qualifications with at least 1 year of related work experience in a commercial kitchen environment.
Key Duties & Responsibilities:
- Plan, design, and update menus in collaboration with the Head Chef, incorporating seasonal produce and customer feedback.
- Manage kitchen budgets, monitor food costs, and negotiate with suppliers for the best quality and value.
- Oversee daily kitchen operations to ensure timely preparation and service of high-quality dishes.
- Maintain exceptional standards in food presentation, taste, and portion control.
- Ensure compliance with all food safety, hygiene, and occupational health and safety regulations.
- Train, mentor, and supervise junior kitchen staff, fostering a positive and productive work environment.
- Develop and implement new recipes, cooking methods, and presentation ideas to keep menus innovative.
- Coordinate with front-of-house staff to ensure smooth service during busy periods.
- Monitor stock levels and implement efficient stock rotation practices to minimise waste.
- Oversee special event catering and private functions held at the venue.
- Adapt menus and service styles for both restaurants, catering to different culinary themes and customer preferences.
Salary: AUD $75,000 – $80,000 + Superannuation
