The Client
Taj Curry Garden is a popular Indian restaurant located in Mill Park in VIC. They are currently looking for an experienced Chef to join their team.
The Role

This is a full-time role with an annual salary set at $76,000 to $86,000 plus superannuation, depending on experience.
Responsibilities
Preparing and cooking of food in the commercial Kitchen in the restaurant as per the menu.
Seasoning and portioning food and arranging it on the plates ready to be served.
Maintaining quality of food by regulating temperatures of equipment and making sure food is cooked properly before serving customers
Storing food in temperature-controlled equipment
Plan restaurant menu and estimate all the food and labour costs accordingly.
Maintain cost efficiency by routinely sourcing food supplies from vendors within the set budget
Adapting food preparation to accommodate customers with special dietary needs.
Instructing restaurant staff on hygiene regulations and ensuring their consistent implementation.
Addressing food preparation concerns with managers, kitchen, and front desk staff.
Monitoring portion and waste control
Supervising all kitchen staff and ensuring smooth kitchen operations, including rostering, time sheet submissions and job delegation
Demonstrating cooking techniques to cooks, trainee cooks and advising them on cooking and procedures
Oversee and implement Food Safety and OH’S practices to ensure a safe and compliant work environment
Requirements
Minimum requirement Certificate IV in Commercial Cookery
Strong food knowledge and skills in authentic Indian cuisine
At least 2 year of experience as a Chef in a similar role
At least 2 year experience in tandoori cooking
At least 2 year experience in preparing advanced marinades, masalas and curry pastes and sauces from scratch
At least 2 year experience preparing and cooking Indian breads
At least 2 year experience operating and maintaining traditional clay tandoor ovens
Must be able to work with proteins like beef, mutton and pork
Passion for great food and presentation
Understanding of, and commitment to, food safety
Experience in kitchen operations and in managing a team
Experience in training kitchen staff
Ability to work well under pressure
Goods ordering and menu costing
Stock control and wastage minimization
