About the Position:
As a Chef at Ruma Arte Bianca, you will play a pivotal role in crafting authentic Italian dishes that delight our discerning Double Bay clientele. This full-time role involves preparing and presenting high-quality pizzas, pastas, and starters in our bustling kitchen, ensuring every dish reflects our commitment to excellence. Reporting to the Head Chef, you will contribute to menu innovation and uphold our reputation for bold, fresh flavours, making this role essential to our mission of delivering memorable dining experiences.
Key Responsibilities:
Plan and develop menus, incorporating seasonal ingredients and authentic Italian techniques.
Estimate food and labour costs, and order supplies to maintain kitchen efficiency.
Monitor dish quality at all stages, from preparation to presentation, ensuring consistency.
Collaborate with managers, dietitians, and front-of-house staff to address food preparation needs.
Demonstrate cooking techniques and guide kitchen staff on proper procedures.
Prepare and cook a variety of dishes, including wood-fired pizzas and handcrafted pastas.
Enforce hygiene regulations to maintain a safe and compliant kitchen environment.
Assist in selecting and training kitchen staff as needed.
Freeze and preserve foods to minimise waste and ensure quality.
Requirements:
Australian citizens and permanent residents are encouraged to apply.
Certificate IV in Commercial Cookery (or equivalent).
Minimum 1 year of experience in a professional kitchen.
Technical skills: Proficiency in Italian cooking techniques, particularly pizza and pasta preparation; ability to operate wood-fired ovens; strong knowledge of food safety and hygiene standards.
Interpersonal skills: Excellent communication and teamwork abilities; ability to thrive in a fast-paced environment; customer-focused mindset with attention to detail.
