Key Responsibilities:
• Plan and design menus that reflect the authentic flavours and style of Momo and Chilies, ensuring variety and alignment with customer preferences.
• Estimate food, labour, and ingredient costs to help maintain profitability while preserving high food quality.
• Order and manage stock of food supplies, including momos, chillies-based sauces, fresh meat, vegetables, and specialty spices.
• Prepare and cook food to recipe standards; ensure consistent taste, presentation, and timely delivery of all dishes.
• Monitor quality of dishes at every stage—from prep through garnishing and final plating—to ensure high standards are met.
• Enforce hygiene, food safety, and sanitation regulations in the kitchen, ensuring all staff follow best practices.
• Demonstrate and train kitchen staff in cooking techniques specific to momo making, sauce preparation, and chilli-seasoned dishes.
• Discuss food preparation issues and feedback with restaurant management, service staff, and if applicable with diet or health advisors (e.g. for dietary restrictions).
• Maintain kitchen equipment, ensure its correct usage, cleaning, and storage; also ensure freezing, preserving or storing food items appropriately.
• Ensure consistency in portion sizes, recipe adherence, and presentation standards to maintain customer satisfaction.
• Assist in rostering kitchen staff, supervising daily kitchen operations to ensure smooth workflow during service times.
• Innovate new momo fillings, chilli variants or menu specials, keeping in line with restaurant’s brand and customer expectations.
To be successful in this role, it is essential you have:
• Proven experience as a Chef with strong skills in Asian, Indo-Chinese, or Nepalese cuisine, especially momos and chilli-based dishes.
• Ability to design and execute menus while maintaining quality, consistency, and authenticity.
• Sound knowledge of food safety standards, kitchen hygiene, and HACCP practices.
• Strong leadership and team management skills to supervise and train kitchen staff effectively.
• Excellent time management and organizational skills to handle busy service hours.
• Creativity and innovation in developing new recipes and enhancing existing dishes.
• Flexibility to work evenings, weekends, and public holidays as per restaurant requirements.
