Job description:

-Oversee and manage central kitchen operations to ensure timely and consistent food production and distribution across the restaurant group.

-Develop and maintain production schedules aligned with demand forecasts and operational requirements.

-Implement and monitor standard operating procedures (SOPs) to ensure consistency, quality, and efficiency.

-Coordinate with logistics and distribution teams for efficient and accurate deliveries.

-Ensure compliance with HACCP standards, food safety regulations, and workplace health & safety requirements.

-Maintain accurate documentation of production, cleaning, and temperature control records.

-Conduct audits and implement corrective actions to uphold hygiene and safety standards.

-Recruit, supervise, train, and motivate central kitchen staff to achieve operational excellence.

-Allocate tasks effectively, monitor staff performance, and ensure compliance with company policies.

-Foster a positive, safe, and efficient workplace culture.

-Manage procurement, supplier relationships, and inventory control, including stock rotation and waste minimisation.

-Monitor production costs, analyse performance reports, and implement cost-control strategies.

-Negotiate pricing and contracts with suppliers to achieve quality and value.

-Work with management to support the opening of new restaurants within the group.

-Collaborate on the development of new products and menu items to meet restaurant needs.

-Prepare the central kitchen for scaling production to meet domestic and international growth targets.

Qualifications/Attributes:

-Must hold a Relevant Diploma, or at least 3 years of relevant work experience in lieu of the qualification

-Must possess at least a year of relevant work experience.

-Strong knowledge of HACCP, food safety, and workplace health & safety compliance.

-Proven leadership, communication, and organisational skills.

-Demonstrated experience in managing staff, inventory, and production planning.

-Financial acumen in cost control, procurement, and reporting.

Salary Range: $76,000 - $100,000 p.a. excluding superannuation.
