We are currently seeking skilled Butchers with boning experience to join our mobile field team. In this hands-on role, you’ll be responsible for boning, trimming, and preparing game meat to specification in a hygiene-controlled mobile processing environment.

You'll be a member of a team that works 7 days on, then takes 7 days off. You’ll experience an attractive work–life balance and enjoy a stable and predictable income, reviewed annually.

Initially located at Brayton NSW, near Marulan for about six months, then expected opportunity for relocation to other areas in NSW.

Key Responsibilities
• Boning, trimming, and cutting wild game carcasses (including deer, goat, boar, and rabbit) to meet processing specifications
• Operate knives and cutting tools safely and efficiently
• Maintain strict hygiene, sanitation, and cold chain control standards
• Assist with general processing duties, including carcass breakdown and workstation clean-up
• Comply with HACCP protocols, WHS regulations, and mobile facility SOPs
• Work as part of a close-knit team to meet quality and production targets
Required Qualifications & Skills
• Minimum 1 year experience in butchery, boning, or meat processing (game meat or red meat preferred)
• Proven knife skills and ability to work quickly, safely, and cleanly
• Knowledge of Australian food safety, hygiene, and HACCP standards
• Ability to work in cold environments and follow WHS practices
• NSW Safe Food Handling Certificate
• Certificate III in Meat Processing
• Manual Driver’s Licence (desirable for remote travel)
• First Aid and CPR Certificate (desirable)
• Physically fit and willing to work in field conditions for extended periods
