Job Description:
We are looking for a skilled Baker to join our team at The Bakehouse Cafe (NSW) Pty Ltd. The Baker will be responsible for preparing, baking, and finishing a wide variety of artisan breads, pastries, and other baked goods. This role requires a high standard of craftsmanship, consistency in product quality, and adherence to food safety regulations. The ideal candidate will work as part of a collaborative team to uphold our premium product standards and contribute to the daily operations of our bakery.

Duties and Responsibilities:
- Bread & Pastry Production: Prepare and bake a variety of artisan breads, including sourdough, baguettes, rolls, and specialty loaves, as well as pastries such as croissants, danishes, puff pastries, and other viennoiseries using both traditional and in-house recipes.
- Dough and Batter Preparation: Weigh, mix, and knead doughs and batters to create both bread and pastry products.
- Bakery Equipment Operation: Operate and maintain bakery machinery, including mixers, dough dividers, sheeters, and ovens.
- Baking Quality Control: Monitor baking times, oven temperatures, and product consistency to ensure all items are baked to the highest specifications.
- Quality Inspection: Regularly inspect and test baked goods to maintain high-quality standards for taste, texture, and appearance.
- Adaptation of Recipes: Modify recipes as needed to incorporate seasonal ingredients or meet special dietary requirements.
- Stock Management: Control stock levels and monitor raw material usage to reduce waste and ensure smooth production processes.
- Cleanliness & Hygiene: Maintain a clean, sanitary work area and bakery equipment in compliance with food safety standards.
- Production Planning: Assist in planning and scheduling daily production to meet customer demand while minimizing downtime.
- Team Collaboration: Work alongside kitchen and front-of-house staff to coordinate orders and ensure products are ready for timely delivery.
- Mentorship: Provide guidance and training to junior baking staff and apprentices, sharing knowledge and expertise in both bread and pastry techniques.
- Health & Safety Compliance: Ensure compliance with workplace health and safety regulations, HACCP principles, and hygiene guidelines to maintain a safe working environment.
- New Product Development: Participate in the creation and development of new products, offering ideas for seasonal or promotional baked goods.
- Record Keeping: Maintain accurate records of production, inventory levels, and compliance with food safety documentation.

Skills and Experience:
- Qualification: Completion of a Certificate III or IV in Baking or Patisserie, with at least one year of full-time commercial baking or pastry experience.
- Baking Knowledge: Proven hands-on experience and in-depth knowledge of artisan-style bread making, traditional baking techniques, and pastry production.
- Work Schedule: Ability to work early morning shifts, weekends, and public holidays as required.
- Equipment & Processes: Excellent understanding of bakery equipment operations and baking processes, with the ability to troubleshoot and maintain machinery.
- Attention to Detail: A keen eye for detail and commitment to producing high-quality products consistently.
- Organisational & Time Management Skills: Strong organisational skills, with the ability to manage time effectively and meet deadlines in a fast-paced environment.
- Food Safety Knowledge: Familiarity with food safety regulations, HACCP, and WHS requirements, ensuring safe and hygienic working conditions.
- Independent & Team Player: Ability to work independently under pressure while also collaborating effectively with team members.
