  • Job Description

This role supports the Restaurant and Bar's Manager in managing the hotel’s beverage operations, overseeing the Bar's team, ensuring compliance with Accor policies and procedures, and contributing to the continued success of our business. Other duties include, but are not limited to

  • Assist in the preparation of daily, weekly and monthly reports, commenting on key performance indicators and action taken to keep on target.
  • Management and guidance of outlet Ambassadors.
  • Prepare weekly forecasts for each bar and roster Ambassadors accordingly.
  • Ensure constant liaison with the Conference Services department.
  • Adherence to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson.
  • Demonstrate an understanding of stock ordering, PAR levels and stocktake.
  • Represent the Restaurant and Bar's Manager in their absence and as required.
  • Qualifications
  • 2–4 years’ experience in bar or restaurant operations, including at least 1–2 years in a supervisory or assistant management role, ideally within a luxury hotel or high-end venue.
  • Strong knowledge of cocktails, premium spirits, champagne, and wine service, with the ability to innovate and maintain world-class beverage standards.
  • Proven ability to lead, coach, and develop a team, fostering service excellence and delivering memorable luxury guest experiences.
  • Skilled in inventory control, supplier management, budgeting, and revenue optimisation, with sound understanding of POS and hotel systems.
  • Exceptional communication, presentation, and interpersonal skills, with cultural awareness and the professionalism to engage high-profile international guests.
  • Must hold a current Responsible Service of Alcohol (RSA) certificate and have the ability to work a rotating roster.
